Salted whiskey caramels

The idea for this recipe came to me when I wanted to make something for my husband that involved his favorite drink - whiskey. In my opinion the whiskey flavor is not that strong, so I would add a bit more of the whiskey at the end of cooking process, just to add more whiskey "punch" in to the caramels.
These caramels are a wonderful gift or just to treat yourself. They have a subtle whiskey flavor and are nicely sweet and salty. To make them you will need few ingredients, candy thermometer and your favorite whiskey. When the caramels are done, you can simply wrap them in parchment paper and they will look jummy and homemade.

Salted whiskey caramels
(Makes 36 medium sized caramels)

Ingredients:
  • 71g butter
  • 1 Table spoon vanilla extract
  • 1 Tea spoon (or to taste) sea salt flakes
  • 235g heavy cream
  • 300g granulated white sugar
  • 62ml water
  • 90g liquid glucose
  • 62ml whiskey
First you will need to butter and line a square baking dish preferable the size of 20cm (8 inches) with the parchment paper, the sides of the paper must stick out, so that you can get the caramel out of the pan when it cools. 
Put the butter, cream, whiskey and vanilla extract in the pan. Heat up to the boil and set aside. Meanwhile, in the medium sized pot, put the sugar, liquid glucose and water together. Bring to the boil and heat until the temperature is at 154°C (310°F) or at the hard crack stage on the thermometer. It is important that you do not stir the mixture at this stage.  


   



When the sugar mixture is at the right temperature add the cream and butter mixture and whisk. Be careful, the mixture will bubble up and release steam. Cook and whisk constantly until the thermometer shows 120°C (248°F). Pour the caramel in the lined baking dish and leave for 10 minutes to cool. Add the salt and leave to cool completely (about 2 hours). 

When the caramel is set, cut into the desired shape and wrap in parchment paper like candies.
